Most of my vegan stir-fry recipes all begin the same way. In a large skillet over high heat with 1 Tbsp. of extra virgin olive oil (or veggie broth), add 1 chopped onion or 1/2 package of chopped onion with chopped peppers. Then the fun begins and you can be as creative as your family will let you be! Try it with your favorite vegetables and then branch out to some new veggies that you have not tasted before now. Make sure that you add fresh herbs. Lemon or lime juice really adds to the final flavor.
Depending on the number of mouths you want to feed, one package of frozen veggies will easily feed two. So you just need to do the math and add enough to make quick healthy recipes to feed your family. When I go grocery shopping for frozen vegetables, I wait until they are on sale and them stock up with at least 30 packages. I figure at a dollar a package, I’m saving gas money to get to the store and I have an assortment of frozen vegetables on hand in my freezer. I like to use 1/2 packages and mix fresh veggies that go well together and make a colorful palate. You can always serve stir-fry over brown rice for quick easy meal ideas.
When stocking my pantry, I stock up on instant packages of brown rice, in case company arrives unexpectedly. I keep several boxes of thin whole wheat pasta and veggie spirals on hand. A large box of oatmeal is good to keep handy, as well as, large and small zip-lock bags. My grandchildren love mini cornbread muffins, so I buy the 6-pack box for when then drop in. I also purchase large jars of unsweetened applesauce to use as egg replacement in recipes, agave to use as sugar replacement, as well as whole wheat, oat, or rice flour to use as white flour replacement. I replace refined table salt with sea salt and black pepper with ground black pepper.
