Jasmine Rice Stir-Fry

Jasmine Rice Stir-Fry

1 cup Jasmine Rice

1 Tbsp non-dairy butter

2 cups water


1 pkg Seitan, cut into 1″ pieces

1/2 cup fresh celery, sliced to 1/4″

1/2 cup fresh zucchini, sliced into 1″ pieces

1 frozen pkg peas and (diced) carrots

1 fresh onion, sliced and cut into 1/2″ pieces

2 Tbsp olive oil

1 tsp minced garlic

Sea Salt and ground Black Pepper to taste

 

Jasmine Rice: In a small pan, add rice to water and boil for 10 minutes until water is absorbed. Add butter, stir, and set aside.

Stir-Fry: In a large skillet over high heat, saute onion in olive oil with garlic. Stir in Seitan, celery, zucchini, and peas and carrots

and cover for 7-10 minutes until heated through. Turn off heat, remove lid, and stir in Jasmine Rice. Cover until ready to serve.

 

Jasmine Rice Stir-Fry was a delicious combination of tender Jasmine Rice, delicious vegetables and flavorful Seitan.
