Mandarin Orange Stir-Fry with Tempeh

1 pkg Tempeh, sliced to 1/4″ thick

1 pkg frozen Italian Style Vegetables( zucchini, carrots, cauliflower, baby Lima beans, Italian green beans, red peppers)

1 pkg fresh Stir-Fry kit with Kale ( brussel sprouts, carrots, broccoli) and orange sauce(orange juice, soy sauce, garlic, ginger)

2 Tbsp olive oil

1 tsp minced garlic

sea salt and ground black pepper

 

In a large skillet over high heat, saute Tempeh in olive oil and minced garlic.Stir in vegetables and stir-fry kit with fresh kale. Cover until vegetables are heated through 5-10 minutes. Stir in mandarin oranges and juice. Cover until ready to serve. Season to taste with sea salt and ground black pepper.

 

Mandarin Orange Stir-Fry with Tempeh was a refreshing mixture of vegetables and Tempeh in an orange sauce topped with mandarin oranges! Delicious!
