1 pkg frozen stir-fry vegetables(broccoli, cauliflower, carrots, green beans, mushrooms)

Stir-Fry Medley

1 -2 Tbsp olive oil

1 onion, chopped

3-4 sweet peppers, capped & chopped

1 red bell pepper, chopped

1 cup shredded broccoli and carrots

 

In a large skillet on high heat, add onion and sweet & bell peppers into olive oil. Add frozen stir-fry vegetables and shredded broccoli and carrots. Cover with lid and cook until vegetables are heated through, about 5-10 minutes.

 

This healthy Stir-Fry Medley makes a great quick lunch or you can serve it over quinoa or brown rice for your dinner guests. If there happen to be any leftovers, I use them to make wraps for lunch the next day
