Black Bean and Veggie Stir-Fry with Jasmine Rice

1/4 cup banana peppers, sliced to 1/4′

1 /2 cup fresh broccoli, cut into 1″ pieces

1/4 cup green onions, sliced to 1/4″

1/4 cup cherry tomatoes, cut to 1/4″ pieces

1/4 cup zucchini, cut into 1/4″ pieces

1 Tbsp minced garlic

2-3 Tbsp olive oil

1/2 pkg pre-made salad kit: (kale, bok-choy, snap peas, artichoke) about 1/2 cup each ingredient

1 cup jasmine rice, cooked according to package instructions

sea salt and ground black pepper to taste

 

Add 1/2 tsp salt and 1 cup rice to 2 cups water. Boil to 10-15 minutes until rice is tender and water is absorbed.

Meanwhile, in a large skillet over high heat, saute garlic in olive oil. Stir in all vegetables and cover for 5-7 minutes

until vegetables are tender. Remove from heat and serve with rice.
