Veggie Meatballs with Coconut Curry

1 pkg pre-made salad kit:(1 cup kale, 1/2 cup bok-choy, 1/4 cup broccoli, 1/4 cup snap peas)

1/4 cup baby corn, cut into 1″ pieces

2 small zucchini, cut into 1/4″ pieces

1/4 cup green onions, cut into 1/4″ pieces

1/4 cup cherry tomatoes, cut into 1/4″ pieces

2-3 Tbsp olive oil

1 Tbsp minced garlic

Coconut Curry Sauce: mix following ingredients:

1 can coconut milk

3 1/2 Tbsp curry powder

2 Tbsp Bragg’s Aminos

2 Tbsp water

 

In a large skillet over medium heat, saute garlic and meatballs in olive oil. Mix together Coconut Curry sauce ingredients and preheat in microwave to mix well. Add all vegetables and pour Coconut Curry sauce over them to simmer for 5-10 minutes.
