2 Tbsp olive oil
1/2 pkg fresh onion, chopped
1/2 fresh yellow, orange & red bell peppers, sliced into 1″ pieces
1/2 pkg fresh sliced mushrooms
3 small fresh zucchini, sliced
Sea salt & ground pepper to taste
In large skillet on high heat, cook onion and bell peppers in olive oil.
Add fresh sliced mushrooms for about 5 minutes.
Then add sliced zucchini till tender for about 5-10 more minutes.
Season with sea salt and ground pepper to taste.
