Pineapple Stir-Fry with Jasmine Rice

1 cup Jasmine Rice

1 Tbsp non-dairy butter

Add 1 cup Jasmine Rice and 1 Tbsp butter to 2 cups water. Cover with lid until all water has absorbed. Remove from heat and set aside.

 

Stir-Fry:

2 cups fresh pineapple, chopped to 1″x1/2″ pieces

1 cup  broccoli

1 cup  cauliflower

1 cup sliced carrots

1 cup sweet baby corn, cut into 1″ pieces

1 pkg  meatless steak strips (Morning Star)

1 cup green beans

1/4 cup basil, chopped fine

1/4 cup green onion stems, chopped to 1/4″

1 onion, cut into 1″ pieces

sea salt and ground black pepper

2 Tbsp. olive oil

 

In a large skillet over high heat, saute onion, vegetables, meatless steak strips, and seasonings for 7-10 minutes until vegetables are tender.

Stir in Jasmine Rice, remove from heat, and cover until ready to serve.Delicious!
