1 pkg meatless grilled chicken strips (Beyond Meat)

Curry Chicken Stir-Fry with Pole Green Beans

2-3 Tbsp olive oil

1 tsp minced garlic

1 pkg frozen stir-fry starters (1/4 cup broccoli tops,1/4 cup sugar snap peas, 1/4 cup pole green beans, 1/4 cup sliced carrots,

1/8 cup sliced celery, 1/8 cup chopped onions, 1/8 cup sliced mushrooms, & 1/8 cup red peppers)

1/2 cup frozen pole green beans

 

Curry Sauce:

3 tsp ground curry

3 tsp water

3 tsp olive oil

1/2 cup almond milk

 

1 cup Jasmine rice (optional) cooked according to package instructions

 

In a large skillet over medium heat, saute meatless grilled chicken strips in olive oil and minced garlic. Add frozen stir-fry vegetables and extra pole green beans. (Optional rice could be prepared as vegetables are cooking according to package instructions.) Cover chicken and vegetables for 5-10 minutes until green beans are tender. Then, reduce to low heat and stir in Curry Sauce. Cover for 5 more minutes while Curry Sauce simmers. Serve while hot!
