1 pkg Rotini, cooked according to package instructions

Rotini with Stir-Fry Veggies

 

1 can green peas

1 jar roasted red peppers, cut into 1″ pieces

2 cups broccoli, cut into 1″ pieces

1 pkg (1 cup) chopped onions with bell peppers

2-3 Tbsp olive oil

Sea salt and ground black pepper to taste

 

In large pot with boiling water, cook Rotini for 10 minutes until tender. Rinse and set aside.

In a large skillet over high heat saute onions with bell pepper in oil. Lower heat to medium,

add remaining vegetables and seasoning and cover until tender about 10 minutes. Serve veggies over Rotini.
