Lo Mein with Vegetables

1 pkg Lo Mein noodles, cooked according to package directions

1 small bunch green onions, cut into 1/2″ pieces

1/2 crown cauliflower, cut into 1″ pieces

1/2 crown broccoli, cut into 1″ pieces

1 cup almond milk

2 oz non-dairy cream cheese

1 1/2 tsp Dijon Mustard

Sea Salt and ground black pepper to taste

In large stockpot, boil noodles for 10 minutes until tender. Drain and set aside.

In large skillet, heat milk, cream cheese, and wisk in mustard and seasonings. Add green onions,

cauliflower and broccoli and cover about 10 minutes until tender. Stir in noodles once vegetables

are tender and simmer until ready to serve.

 

Lo Mein with Vegetables makes a wonderful meal! Be creative and add your favorite vegetables to add variety!
