1 (2 cup) pkg shredded broccoli and carrots
1 zucchini, shredded
1/2 pkg cherry tomatoes, cut in half
6 sweet peppers, capped & cut into 1/2″ pieces
2-3 Tbsp extra virgin olive oil
sea salt & ground black pepper to taste
1/2 tsp cumin
1/2 tsp curry
1/2 tsp turmeric
1 Tbsp minced garlic
1 onion, chopped well
1 cup water
In large skillet on high, add onion, garlic, spices to olive oil. Stir in shredded broccoli, carrots, and zucchini. Add cherry tomatoes, sweet peppers, water and cover with lid. Reduce heat to medium and let simmer about 10 minutes until the shreds are tender.
This Broccoli-Carrot-Zucchini Stir-Fry is full of flavor and filling. It has a Mediterranean taste and is super easy to prepare. Having the vegetables shredded changes the texture but the nutrition is the same!
