1 pkg instant brown rice (cooked according to package directions)

Bell Pepper-Broccoli Stir-Fry

2 crowns broccoli, cut into 1″pieces

1 red, orange, & yellow bell peppers, cut into 1″ pieces

1 bunch fresh asparagus, cut into 1″ pieces

1/2 pkg frozen onion with bell peppers

2-3 Tbsp olive oil

sea salt and ground black pepper. to taste

 

In large skillet over high heat, cook onion and bell peppers in olive oil till tender. Add asparagus and broccoli and cover till tender.

In separate medium pan with boiling water, cook rice 10 minutes.

Add drained brown rice and season with sea salt and ground black pepper to taste.
