2-3 Tbsp olive oil

Vegetable Stir-Fry

 

1 Tbsp minced garlic

1 cup broccoli, cut into 1″ pieces

1 cup cauliflower, cut into 1″ pieces

1/2 cup zucchini, sliced and halfed

1/2 cup red, yellow, orange bell peppers mixed, cut into 1/2″x1″ strips

1/2 cup kale, shredded

1/4 cup roasted red peppers, cut into 1″ pieces

1/4 cup canned sliced olives

1 Tbsp lime juice

sea salt and ground black pepper to taste

 

In a large skillet over medium heat, saute vegetables in olive oil and garlic for 5-7 minutes. Turn off heat and cover until ready to serve. Season with sea salt and ground black pepper to taste. Vegetables are best  served tender but not discolored or soft.
