1 pkg frozen Mexican Vegetables(corn, broccoli,cauliflower, red beans)

Mexican Vegetable Stir-Fry

2-3 Tbsp olive oil

1 tsp minced garlic

1/2 cup salsa, mild

1/2 cup grated dairy-free cheese

1 cup baby spinach

1/2 cup frozen meatless ground

1/2 pkg frozen chopped onion with bell pepper

 

In a large skillet over high heat, saute onion with bell pepper and meatless ground in olive oil and garlic.

Stir-in Mexican vegetables and reduce heat to medium for 5 minutes and cover until ready to serve.

Spread out 1/2 cup fresh baby spinach on plate and top with Mexican Vegetable Stir-Fry. Top with salsa and grated cheese!
