2 potatoes, cut into 1″ pieces with skin left on
1 bunch fresh broccoli, cut into 1″ pieces
2-3 fresh bella mushrooms, sliced and cut into 1″ pieces
1/2 fresh green bell pepper, cut into 1″ pieces
1 onion, cut into 1″ pieces
2-3 Tbsp minced garlic
sea salt and fresh ground black pepper to taste
In large skillet over high heat, brown onion, green bell pepper, and potatoes in olive oil. Add broccoli, mushrooms, and seasonings and cover with lid for 5-7 minutes.
This delicious Potato-Broccoli Stir-Fry is very filling and nutritious.We loved the flavor of the fresh vegetables together!
