1 pkg veggie pasta (spiral rotini)

2 Tbsp olive oil

2 tomatillo tomatoes, cut up into 1/4″ pieces

1 yellow squash, cut up into 1/4″ pieces

1 zucchini squash, cut up into 1/4″ pieces

1 can black, beans, drained & rinsed (optional)

1 small can pimentos, drained

1 purple onion, chopped

2 tsp basil

2 tsp cilantro

1 lime, juiced

Cook veggie pasta according to package instructions and boil on high in large pot

for 10 minutes. Add olive oil to pasta to prevent it from sticking together.

Drain pasta, rinse with cold water, and let cool.  Drain and rinse can of black beans and cook in

microwave for 1 minute and let cool. Combine chopped veggies, add lime juice and seasonings.

Add pasta and black beans and stir well.. Cool 1-2 hours or overnight.

 

This veggie pasta makes a great meal for a family get-together and will feed a crowd. It is great for the summer because it is best served cold and enjoyed by all on those hot summer days.
