2 Tbsp Olive Oil

Vegan Beef, Black Beans and Rice

1/2 pkg frozen chopped onions with bell peppers

1/2 pkg frozen vegan ground beef

1 can black beans, drained and rinsed

1 pkg instant brown rice, prepared according to pkg instructions

Sea salt and ground black pepper to taste

 

In large skillet on medium heat, cook onions and bell peppers in olive oil. Add ground beef, black beans and cover with lid.

Meanwhile, boil water in medium pan and cook instant pkg of brown rice for about 10 minutes. As soon as rice is done,

open package and add to skillet with sea salt and ground pepper to taste. Serve and enjoy!

This recipe of ground Vegan Beef, Black Beans, and Rice is great served with chips and salsa!

Any leftovers would make great tacos or burritos for a second meal!
