1 package frozen breaded meatless chicken patties
1 fresh yellow squash, sliced and quartered
1 fresh zucchini, sliced and quartered
1 fresh red onion, sliced and quartered
1 fresh green bell pepper, sliced into 1-2″ pieces
1 fresh red bell pepper, sliced into 1-2″ pieces
2-3 Tbsp olive oil
2 Tbsp sweet chili sauce
1 Tbsp Bragg Liquid Aminos seasoning
1-2 slices fresh pineapple, quartered
1 pkg. instant brown rice
Cook frozen chicken patties on pan in 400 degree oven for 25 minutes until crisp.
Cook rice according to pkg instructions in small pan in boiling water for 10 minutes until done.
In large skillet in olive oil, cook onion, red & green bell pepper, squash, and zucchini.
Add fresh pineapple pieces, sweet chili sauce, and Bragg Liquid Aminos for seasoning.
Cut up cooked chicken patties and serve over rice mixed with sweet and sour vegetables.
