4-6 yellow squash, sliced

Squash Casserole

1 sleeve Ritz crackers, crumbled

1 onion, chopped

3 Tbsp vegan butter, Earth Balance

1 pkg vegan mozzarella cheese

2-3 Tbsp olive oil

Ground black pepper and sea salt, to taste

 

In large skillet on medium heat, cook onion and squash in olive oil til tender.

Pour into oven proof 9×11″ pan and mix in butter and crackers.

Bake in 350 oven for 20-30 minutes. Season to taste and top with cheese.

 

This Squash Casserole was my Dad’s favorite dish for family gatherings so I had to try my hand at it for the holidays.
