4 quarts water
2 pkg instant brown rice
2 tbsp Olive oil
1 onion, chopped
2 cups cabbage, chopped
1 can tomatoes, diced (or 1 tomato diced)
1 can black-eyed peas, rinsed and drained
1 pkg vegan sausage, chopped
1/2 tsp sea salt
1/2 tsp ground pepper
1/2 tsp thyme
Boil water in medium saucepan to rapid boil.
Add rice packages and return to boil.
Turn off heat and set for 10 minutes til ready to serve.
Brown onion in olive oil in large skillet until clear.
Add sausage to brown, but do not overcook.
Add cabbage, tomatoes, peas, and spices.
Cook 5-10 minutes until hot.
Drain water from rice. Open packages and add rice to skillet.
Stir well and serve.
