1 can Enchilada sauce
1 can black beans, drained and rinsed
1 pkg frozen onion with bell peppers
2-3 Tbsp olive oil
1/2 pkg frozen meatless ground
1/2 pkg dairy-free shredded mozzarella cheese, optional
1 tsp curry
1 tsp cumin
1 tsp turmeric
sea salt and ground black pepper to taste
In large skillet on high heat, add chopped onion and bell pepper to olive oil.
Add meatless ground,black beans, curry,cumin, turmeric, and sea salt and ground pepper to taste.
In ovenproof dish, fill tortilla with Enchilada mixture, roll up tortilla, and place seam side down, Cover tortillas with layer of enchilada sauce and top with cheese if preferred.
I love Enchiladas and have tried corn and whole wheat tortillas just for variety. You can easily feed a crowd with these easy Enchiladas! I hope you will love them too!
