3 large tomato basil tortillas

3 slices Daiya cheese

3 meatless breakfast patties

1/2 pkg extra firm tofu, crumbled

1/2 pkg frozen chopped onion with bell peppers

1 tsp basil

1 tsp turmeric

1 tsp cumin

sea salt & ground pepper to taste

3 Tbsp olive oil

 

In large skillet on high heat, cook onions and bell peppers with crumbled tofu. Add seasoning to taste.

While tofu eggs are cooking, place frozen meatless breakfast patties in oven at 350 for 10 min.

Place 1 cheese slice on each tortilla and fold in half. Then warm in microwave for 1 minute.

Once extra liquid from tofu & onions is absorbed in skillet, remove from heat. Remove patties from oven.

Open tortilla and spoon in tofu eggs and onions with bell peppers. Cut up patties and place in burrito.

My husband and I enjoyed our Breakfast Burrito with a cup of hot tea.
