Vegan Pecan Pie

Vegan Pecan Pie

1 cup pecan halves

1 Tbsp light brown sugar

1/4 cup vegan butter (Earth Balance)

Pinch of sea salt

10 whole wheat saltine crackers

1/2 cup water

3 Tbsp vegan butter(Earth Balance)

1/2 cup light brown sugar

1/4 cup raw agave

2 tsp vanilla

1 small cup applesauce (1/4 cup container)

3 1/2 Tbsp cornstarch

Use fork to punch holes in pie crust and bake for 5-7 minutes at 350, then remove from oven.

Caramelize pecans with butter, brown sugar and salt in large skillet over medium heat, then set aside.

In a separate bowl, crumble crackers into water and allow water to absorb.

Then, mix remaining ingredients in food processor and add cracker mixture. Process for about 1 minute.

Bake in medium skillet until it boils for about 2 minutes. Then pour into pie crust and top with caramelized pecans.

Bake in oven 45-50 minutes. Let cool & serve.

 

I enjoyed making this Vegan Pecan Pie for Thanksgiving as it was a special dessert to be shared with friends and family.
