Vegan Chocolate Coffee Cake

1/2 cup vegan butter (Earth Balance)

Vegan Chocolate Coffee Cake

1/2 cup agave

1/2 pkg firm tofu

2 cups bread flour (your choice)

1/2 cup non-dairy chocolate coffee (Dream Latte Caramel coffee+Almond drink)

2 tsp baking powder

spray olive oil

 

Preheat oven to 350 degrees and lightly grease stone bundt pan with olive oil spray.

Using electric mixer, mix softened butter, agave, tofu, flour, coffee, and baking powder for about 2 minutes.

Pour mixture into bundt pan and bake in middle of oven for about 55 min.

 

I enjoyed this Vegan Chocolate Coffee Cake with hot tea Christmas morning as well as in the afternoon!
