Peach Blueberry Cobbler

2 large ripe peaches, pitted, pared, & sliced

1 cup frozen blueberries

2/3 cup maple syrup (1/3 cup for batter & 1/3 cup for fruit)

1 cup whole wheat flour

1 1/2 tsp baking powder

1/4 tsp sea salt

1 tsp cinnamon

1 tsp vanilla

1/3 cup coconut oil, melted

3/4 cup coconut milk

spray olive oil

 

In microwave safe dish, heat peaches, blueberries, and 1/3 cup maple syrup for 1-2 minutes until hot.

Spray oven safe square dish with olive oil and pour in heated fruit mixture.

In separate bowl, mix flour, 1/3 cup maple syrup, baking powder, sea salt, vanilla, oil, and milk. Stir until

blended well. Pour over fruit mixture. Bake in 375 oven for 30- 35 minutes.

This Peach Blueberry Cobbler reminds me of cooking in Home Economics class in high school! Of course, then we used butter, sugar, and white flour, but the flavor is unforgettable! Try making the healthy version of cobbler and rekindle an awesome dessert! I made this Peach Blueberry Cobbler for breakfast!!
