Oatmeal Raisin Cookies

Oatmeal Raisin Cookies

1 1/4 cup all purpose flour  (whole wheat)

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1/2 tsp nutmeg

3/4 cup vegan butter (Earth Balance)

1 cup brown sugar (or molasses or maple syrup)

1/2 cup agave

1 tsp vanilla

1 tbsp water

2 cups whole grain oats

1 cup raisins

In large mixing bowl, mix wet ingredients together, then add dry ingredients. Mix well and scoop 1″ balls onto parchment paper lined flat pan. Bake at 350 for 10 minutes. Flatten cookie balls with spatula after removing from oven.  Makes about 3 dozen cookies.

I love the healthy flavor of oatmeal and the sweetness of raisins together in these delicious Oatmeal Raisin Cookies. You can also freeze the cookie dough for about a month to have ready for drop-in company anytime!
