2 cups crushed Oreo cookies or graham crackers

Choc-Chip-Coconut Bars

1/2 cup vegan margarine, melted (Earth Balance)

1 cup canned coconut milk, stirred well

1/4 cup agave or pure maple syrup

1 tsp vanilla

1/8 tsp sea salt

2 Tbsp cornstarch

1 1/2 cups choc-chips (Enjoy Life)

1 1/2 cups shredded unsweetened coconut

1/2 cup raw almonds, chopped

To prepare crust, pour crushed cookies into 9×13″ pan and pour melted margarine over crumbs.

Mix together in separate bowl, coconut milk, agave, vanilla, salt & cornstarch. Pour over crust.

Next, spread coconut over crust, then choc-chips, then top with crushed almonds.

Bake 30 minutes in 350 degree oven , then refrigerate about 8 hours before serving. Cut into 1 1/2″ squares.

These Choc-Chip-Coconut Bars are a great dessert for a large gathering because they are rich in flavor and satisfy your chocolate craving!
