1/2 pkg Oreo cookies (for crust)
1 12 oz jar almond butter
1/2 cup agave
1 tsp vanilla
1/2 cup carob (or cocoa)
In food processor, first grind Oreo cookies to fine powder to use as crust and place in another bowl. Spoon Oreo crumbs into mini cupcake pan inside paper liners.
In food processor add almond butter, carob, agave, vanilla and mix well. Stir well and spoon 2 tsp of mixture into cupcake liners over each Oreo crust. Refrigerate or place in freezer until firm.
These Almond Butter Cheesecake Bites are a rich dessert that can be prepared ahead of time. If you prefer, you can make them into one large cheesecake as well.
