Marinated Vegetable Salad

1 cup extra Virgin Olive Oil

1/2 cup Agave

1 purple onion, chopped

2 green bell peppers, chopped

2 cups celery, chopped

2 oz. jar chopped pimento

2- 11 oz. cans white shoepeg corn, drained & rinsed

2 cans small green peas, drained & rinsed

2 cans french style green beans, drained & rinsed

Sea salt and ground black pepper to taste

 

Mix vinegar, olive oil, and agave. Heat in microwave 2 minutes.

Chop bell peppers, celery, and celery. Add corn, grean peas, and green beans.

Mix all ingredients together and season with sea salt and  black pepper to taste.

Marinate at least 8 hours in refrigerator. Drain before serving.
