Avocado-Tomato Tostadas

1 avocado, pared, cored, & sliced

1 tomato, sliced

4 Tbsp hummus (classic)

1 cup baby spinach

Sea salt & Ground pepper to taste

 

Warm 4 tostadas in microwave. Spread 1 Tbsp hummus on each warm tostada. Add spinach, sliced avocado and tomato. Season with sea salt and ground pepper to taste. Enjoy! Recipe can be easily duplicated to serve a crowd!

 

Serve your family and guests in style with Avocado-Tomato Tostadas. This appetizer can make a great afternoon snack as well as a side salad. I like to serve it with vegan burritos for a delicious Mexican style meal. Tostadas can be served as salad or entree, you choose!
