Cashew Cream with Rotini

1/2 pkg cashews

1 package frozen Fiesta vegetables

1/2 pkg chopped onions with bell peppers

2-3 Tbsp Olive Oil

Sea salt and ground black pepper to taste

 

In large pot of water, boil cashews for 10 minutes. Drain cashews(and save liquid) and blend in blender on high until creamy.

Use water from cashews to boil Rotini for 10 minutes on high. Drain.

In a large skillet over high heat, saute onion in olive oil and add Fiesta vegetables.

Stir in Cashew Cream and add sea salt and ground black pepper to taste. Stir in Rotini and serve.
