Zucchini Tacos

1 zucchini, chopped into 1/4″ pieces

3 Roma tomatoes, chopped into 1/2-1″ pieces

1 onion, chopped into 1/2″ pieces

2-3 Tbsp olive oil

1 cup meatless ground

1 tsp chili lime seasoning

sea salt and ground pepper to taste

1 pkg corn tacos

1 cup baby spinach

1 pkg hummus

 

In large skillet over high heat, saute onion, tomatoes, and zucchini in olive oil. Add meatless ground and seasoning. Cover and reduce heat until heated thoroughly.

Warm taco shells in 350 oven for 10-15 minutes. After taco shells are warm, fill each taco with 1 tsp hummus and 3-4 baby spinach leaves. Add zucchini mixture and serve.
