2 zucchini, sliced into thin noodles

Zucchini Spaghetti and Meatballs

1/2 pkg frozen chopped onion with bell-pepper

1 cup bella mushrooms, sliced 1/4″

2-3 Tbsp olive oil

1 pkg frozen meatless meatballs

1 jar Prego spaghetti sauce (Garden Style)

1 Tbsp. minced garlic

 

In large skillet over high heat, saute garlic, mushrooms, and chopped onion with bell pepper in olive oil. Stir in zucchini noodles for about 5 minutes until tender. Reduce heat to medium, add meatballs, sauce, and 1 cup water, and cover. Heat until bubbly for 10-15 minutes. Heat can be reduced to low to simmer until ready to serve.
