1 pkg 6″ round flour tortillas
1 pkg shredded zucchini (1 cup for mixture)
1/2 cup banana peppers, sliced to 1/4″
1 pkg salsa, mild (1 cup for mixture/1 cup for dipping)
1 pkg guacamole, mild (1-2 cups)
1 onion, chopped to 1/4″
1 tsp minced garlic
1 tsp curry
1 tsp cumin
1 tsp turmeric
1/2 pkg frozen meatless ground (Boca)
1 Tbsp olive oil
Take tortillas out of package, wrap tortillas in aluminum foil, and warm for about 10 minutes at 350 in oven. Meanwhile, in a large skillet over high heat, saute meatless ground, shredded zucchini, and chopped onion in olive oil with minced garlic. Stir in 1 cup salsa and seasonings(curry, cumin, turmeric) and cover until heated through. Take tortillas out of oven, spoon skillet mix onto tortilla, top with 1 Tbsp guacamole and roll into a burrito. Enjoy!
Zucchini Burritos with Salsa and Guacamole were delicious! These were easy and quick to prepare and healthy to consume!
