2 cups organic baby spinach

Veggie Salad

1/4 cup bell peppers, capped and sliced in1/2″ strips

1/4 cup fresh broccoli, cut into 1′ pieces

1/4 cup fresh cauliflower, cut into 1″ pieces

1/8 cup cherry tomatoes, chopped to 1/4″

1/8 cup green onion, chopped to 1/4″

1/4 cup onion, chopped to 1/4″

1/4 cup zucchini, chopped to 1/2″

1/2 cup meatless ground

2 Tbsp olive oil

1 tsp minced garlic

1/4 cup peach salsa

 

In a large skillet over medium heat, saute meatless ground in olive oil and garlic. Add all vegetables (except spinach) and cover for 5-7 minutes. Serve over fresh baby spinach and top with peach salsa. Yum!
