2 meatless sausages, sliced to 1/4″

Tomatoes, Sausage, Black Beans, and Rice

1 can petite tomatoes with juice

1 can black beans, drained and rinsed

1 cup Jasmine rice, pre-cooked according to package instructions

2 Tbsp olive oil

1 tsp dairy-free butter

ground black pepper and sea salt to taste

 

In a large skillet over high heat, saute sausage slices, tomatoes, and black beans in olive oil. After boiling Jasmine rice and butter in separate pan for 10 minutes, let it sit with lid on until water is absorbed. Then, stir rice into large skillet with sausage, tomatoes, and black beans. Turn off heat and cover with lid until ready to serve. Season with ground black pepper and sea salt to taste.

Tomato, Sausage, Black Beans, and Rice was a quick and easy entree that can be prepared in minutes! It was filling and had lots of delicious flavor!
