1/2 pkg frozen chopped onions with bell peppers

2-3 Tbsp olive oil

1 bunch fresh organic celery stalks, washed and sliced to 1/4 ”

1/2 pkg frozen meatless ground

3 cans peeled chopped tomatoes (with juice)

1 can Rotel tomatoes (mild)

3 cans black beans, drained and rinsed

1 can whole corn, drained and rinsed

1 can light red pinto beans, drained and rinsed

3 Tbsp minced garlic

1/4 tsp sea salt

1/4 tsp chili pepper

1/2 tsp Italian seasoning

1 tsp cumin

 

In large stockpot, saute onion and peppers in oil on high. Add seasonings, celery, and meatless ground.

Add tomatoes, black and pinto beans, and corn. Cover and cook until boiling well. Reduce heat to medium until ready to serve.

 

Taco Soup is my favorite meal! I love it anytime, especially on rainy days, or when it’s cool outside, or when you’re snowed in!!

I like to eat it with corn chips, or corn bread, or crackers! It always is my comfort food and I love to share it with family and friends.
