2-3 Tbsp olive oil

2 TbspĀ  taco seasoning

1/2 pkg frozen chopped onions with bell pepper

2 cups shredded broccoli

2 cups chopped kale

1/2 cup salsa

1/4 cup garlic hummus

 

In a large skillet over high heat, saute chopped onion with bell pepper and meatless ground in olive oil.

Add taco seasoning and shredded broccoli and cover until tender, about 5-10 minutes.

Fill serving bowls with chopped kale and top with taco mixture. Garnish with hummus and salsa! Enjoy!

 

Enjoying this chip-less Taco Salad helped me fill up without filling out while I’m trying to reduce my waist-line! The kale was refreshing and nourishing as well!
