Super Bowl Cannelloni Bean Soup

1 can Light Red Kidney Beans

2 cans petite diced tomatoes

1 cup almond milk

2 cups baby spinach, sliced into 1/4″ strips

1 frozen pkg broccoli pearls

1 frozen pkg cauliflower pearls

1 fresh pkg celery, sliced to 1/4″

6 cups (1 1/2 cartons) vegetable broth

 

In a large stockpot over high heat, add vegetable broth, and gradually stir in all vegetables. Cover and bring to a boil. After vegetables become tender, reduce heat and add almond milk.

Serve or move to a crockpot and cook on low until ready to serve.
