1 large spaghetti squash, peeled and cubed into 1/2″ pieces

Spaghetti Squash, Kale, and Couscous

2 cups kale, torn into 1-2″ pieces (can use kale salad)

1 container organic vegetable broth

2 cups chopped tomatoes

2-3 Tbsp olive oil

1 Tbsp minced garlic

1 onion, peeled & chopped to 1/2″ pieces

1 pkg couscous, cooked according to pkg instructions

Spray olive oil

 

Spray olive oil on squash pieces and bake at 400 for 1 hour in oven.

In a medium saucepan, boil 2 cups water. Add couscous and remove from heat. Set and cover with lid for 5 minutes.

In a large skillet over high heat, saute onion and garlic in olive oil. Add broth, tomatoes, and kale and cover for about 10 minutes.

Stir in squash pieces when tender from oven. Serve over couscous!! Delicious!!

 

Spaghetti Squash, Kale, and Couscous was a hit for my family!! They loved it and came back for seconds and are not typically squash lovers.
