Red Cabbage, Carrots, & Potatoes

1 container low sodium vegetable broth

1/2 head red cabbage, shredded

4-6 small red potatoes, quartered

2-3 organic carrots, sliced 1-2″

1/2 tsp turmeric

1/2 tsp cumin

Sea salt and ground black pepper to taste

 

In large stockpot, heat broth with cabbage, potatoes, carrots, and seasonings on high for 30 minutes covered with lid.

 

This Red Cabbage, Carrots, & Potatoes was a hit with my family. Kind of sweet and great as a holiday favorite!
