1 pkg meatless grilled chicken strips

Meatless Chicken Enchiladas

1/2 pkg corn tortillas, (slightly warmed in microwave to soften)

small can enchilada sauce, mild

1 pkg (2 cups) shredded non-dairy cheddar cheese

1 pkg non-dairy cream cheese

1 pkg (1 cup) shredded non-dairy cheddar cheese, for topping

 

Preheat oven to 350 and spray bottom of oven proof pan with olive oil spray.  Pre-warm corn tortillas in microwave to soften. Mix cream cheese, cheddar cheese, and chicken strips in separate bowl. Spoon mixture into softened tortillas, roll to form tortilla, and place in pan. Pour enchilada sauce oven rolled enchiladas. Top pan full of tortillas with shredded cheese and bake for 30-40 minutes until cheese is melted. Serve and enjoy!
