1 box Penne, cooked according to package instructions

2-3 Tbsp coconut oil

1 onion, chopped fine

2 cloves garlic, minced

1-2 tsp Italian Seasoning

Sea Salt and ground Black Pepper to taste

2 cans chopped tomatoes

3 meatless sausage patties

3 cups fresh baby spinach

1 cup grated non-dairy cheese

1 cup Nutritional Yeast Flakes

 

In stockpot with water, add box of Penne to boiling water for 12 minutes. Drain.

In large skillet on high heat, saute onion, garlic, and sausage in coconut oil. Reduce heat to medium.

Add tomatoes,seasonings, Penne, and baby spinach and cover. Once spinach has wilted,

stir in grated cheese and Nutritional Yeast Flakes. Stir well and cover until ready to serve. Enjoy!

 

This easy recipe of Italian Penne was quick to prepare and easily feeds 6-8. The sausage and spinach
