1 carton vegetable broth (4 cups)
4 whole carrots, cut up & capped
1 onion, cut up
1 Tbsp minced garlic
1 tsp celery flakes
1 tsp Italian seasoning
Sea salt and fresh ground black pepper, to taste
Rinse lentils until water is clear using strainer. In large pot, add 4 cups water and lentils. Cook about 15 minutes. Drain and set aside. In large pot, add broth, onion, carrots and seasonings. Add lentils and cook 20 minutes.
I’ve always wanted to make Green Lentil Soup, so after ordering some at my favorite Mediterranean restaurant, I decided to try it. My husband and I enjoyed it and hope you will try it too!
