Flatbread Veggie Wraps

2 Tbsp olive oil

1 pkg Stir-Fry Vegetables(broccoli, snap peas, green beans, mushrooms, carrots,& red peppers)

1 jar roasted red peppers(use 2-3 red peppers)

1 pkg cherry tomatoes (cut in halves)

 

Sea-salt and ground pepper to taste

1 pkg roasted red pepper hummus

 

In large skillet over high heat, saute vegetables in olive oil. Season with sea salt and ground pepper.

Warm flatbread in microwave, spread with hummus, and fill with vegetables. Serve and enjoy!

 

Flatbread Veggie Wraps is one of my favorite afternoon lunches! It can easily be doubled for when unexpected guests arrive.
