1 cup cherry tomatoes

1 purple onion, chopped into 1″ pieces

1 orange & 1 yellow bell peppers, cut into 1″ pieces

2 cups broccoli, cut into bite-size pieces

1 Tbsp basil

sea salt and ground black pepper to taste

 

Mix all vegetables into a large serving pan, cover and bake for 30 minutes at 350.

 

Easy Vegetable Medley is a great entree for a family dinner! Quick and easy and most of all healthy! Great way to eat the Rainbow!
