Creamy Fiesta Rotini with Mock Chicken

1 pkg rotini (cooked according to pkg instructions)

1 jar roasted red peppers, cut into 1″ pieces

2-3 Tbsp olive oil

1 small pkg sliced mushrooms

1 pkg frozen Fiesta vegetables (broccoli, carrots, kidney beans,small white beans, garbonzo beans, italian green beans,and red peppers)

1 Tbsp minced garlic

1 Tbsp basil

1 Tbsp parsley

1 Tbsp nutritional yeast flakes

1 pkg non-dairy vanilla yogurt (Silk)

sea salt and ground black pepper to taste

 

In boiling water, cook rotini pasta for 15 minutes. Drain and set aside to add into skillet.

In a large skillet over high heat, saute mock chicken and mushrooms in olive oil and minced garlic 5-10 minutes. Stir in red peppers and Fiesta vegetables, basil and parsley until tender, about 5 more minutes. Remove from heat and stir in rotini pasta, yogurt, yeast flakes, and sea salt and ground black pepper to taste. Serve and enjoy!
