2-3 Tbsp olive oil

1/2 pkg frozen meatless ground

1 can whole corn, drained and rinsed

1 can black beans, drained and rinsed

1 Tbsp minced garlic

1/2 tsp curry

1/2 tsp ground red pepper

1/2 tsp cumin

sea salt and ground black pepper to taste

1 container hummus (classic with garlic)

1 pkg tostada shells

1 cup baby spinach(for 8 tostadas)

1 cup non-dairy shredded cheese( for tostadas)

1 jar salsa (for tostadas)

 

In large skillet over high heat, saute onion with bell pepper and garlic in olive oil. Add meatless ground and cover. Add corn, black beans and seasonings.

Stir and reduce heat until ready to serve on preheated tostada shells. Spread 1 Tbsp hummus on each shell before adding baby spinach and Corn and Black Bean mixture.

Then top it off with 1/4 cup cheese and  1 Tbsp of your favorite salsa! Enjoy!

 

Corn and Black Bean Tostadas are great to serve to your family. Adding spinach adds nutrition and fiber and salsa adds spices too! You can feed a crowd or save leftovers for lunch the next day!
