2 cups fresh cauliflower, cut into 1″ pieces

Cauliflower with Meatballs and Rotini

1 cup Prego Italian sauce (Garden Blend)

1 pkg frozen meatless meatballs (Gardein)

2 cups cooked Rotini noodles (precook following package instructions)

1 onion, cut into 1/4-1/2″ pieces

4 ripe tomatoes, cut into 1′ pieces

1/2 cup cherry tomatoes, cut in half

1/2 cup banana peppers, capped and cut into 1″ strips

2 Tbsp olive oil

1 Tbsp minced garlic

 

In a large skillet over high heat, add chopped onion, tomatoes, cherry tomatoes, and banana peppers to olive oil with minced garlic. Add cauliflower, sauce, noodles, and meatless meatballs and cover until meatballs are hot and sauce is bubbling.Serve and Enjoy!!

 

Cauliflower with Rotini and Meatballs was created by my cleaning out my refrigerator! I love using fresh vegetables, but need to continually check my refrigerator to use up leftover veggies while they are fresh! Create a new meal by using some leftover fresh veggies tonight!
